Roast “Swiss Steak”

My family’s recipe for Swiss Steak is one of my favorite comfort foods.  It is not quite the traditional Swiss Steak as the gravy doesn’t have the tomatoes and other veggies that most people add.  Ours simply had onions, salt, pepper, thyme and a hint of garlic.

I wanted Swiss Steak the other night for dinner but didn’t have enough round steaks left in the freezer to make a nice pot of it.  I do have an abundance of roasts left however.  I have made this with stew meat as a quickie dinner for myself, and figured I could give it a whirl with the roast as well.   As with most of my roasts, this one only got thawed out enough to pull the wrapping off.  Since this cooked low and slow it wasn’t an issue at all.

Turned out awesome!  Here is what I did…

Recipe for Roast Swiss Steak:

1 2-3 pound beef roast

3 large Vidalia or other sweet onion, chopped

Salt and Pepper

1/4 tsp ground thyme

1/2 tsp minced garlic

1/4-1/3 cup flour

2 TBSP butter

1 TBSP beef base

Pre heat oven to 300’F.  In a roasting pan with a lid (or you could use foil) place the beef and season with salt and pepper, garlic and thyme.  Top with 1/3 of the chopped onions.  Cover and place in oven for about 2 hours.  Toss remaining onions in the smaller amount of flour, season with salt and pepper.  Add the butter and beef base to the liquid in the roasting pan.  Add the additional onions, stirring carefully around the roast to combine the flour and thicken the gravy.  Replace lid and continue cooking another 2-3 hour, stirring gravy occasionally (you may need to add more flour or water depending on the thickness of gravy you prefer).  When the beef is fork tender, serve over mashed potatoes.

This Tuesday was Burger Night.  After a harrowing week of county fairs and family reunions simple was the name of the game, and who doesn’t love a grilled burger?  To accompany this classic, there was also Coleslaw, Grilled Mushrooms, Fried Potatoes, Bread, and Cheesecake with fresh peaches (or hot fudge sauce).

The evening started with a trip over to the neighbor’s BIG tire swing, which of course was super exciting for my little dare devil.  Only the temptation of seeing the new kittens was enough to pry her away from the fun.  And of course, the kittens were adorable and it was a challenge to pull everyone away from them!  I assured the little girls that it was in fact time for the kittens to take a nap and we would visit again soon.

How was fair?

Good, I got champion dairy cow and champion turkey.  I sold them for a lot of money too!  Grandma and Papa bought the dairy by accident, they bid and everyone else stopped!

She did really well, made us proud.

Who bought the turkey?

Mom’s friend from the flower shop.

To eat or to keep?  To eat, they have an appointment with destiny next Tuesday.

How are you feeling?

Better, I just can’t eat much and I do ok.

Gallbladder? You just need to get that out.

If it bugs me again I’m sure I will have to, I already called the Dr.

Ah, she just divided this one in half for us (the two-year-old jabbed the fork right through the middle of the piece and left it there and yes they did share, although a second piece did make its way over)

It wasn’t long after dessert everyone started heading home.  We were all pretty tired from the weeks’ events.

What now feels like the last day of summer, as the temperature had dropped significantly since Tuesday we enjoyed my Dads signature summer meal, BBQ ribs, and potato salad. Mom also made blueberry and strawberry pies to really make it feel like summer!  We’ve all been craving blueberry pie since they are in season, and talking about it a few days before Mom and I realized no one had made a strawberry pie this year and that simply won’t do.  We also had homemade baked beans and as always bread (if you’ve noticed I’ve stopped trying to keep track of what type of bread, it gets changed so slightly most of the time I never know exactly what’s in it, but always delicious).

My cousin’s son has been hanging out at the farm this summer so I arrived at dinner hauling in 2 tweens and 2 toddlers.  Waiting there for us were 11 adults and one baby.  You would think this is an acceptable ratio of big people to small people, I feel like I need a border collie in the mix (although Blake the old man, he was out and about at dinner, feeling better since his pain meds got adjusted, but he is still more interested in eating than guarding).

Can she sit with us? She always eats better.

So to end this, this has literally been sitting open on my laptop for WEEKS… I even missed downloading the pictures from this dinner 😦  Things like toddlers climbing on me, donkeys invading turkey coops and other various insanities have been slowing me down a bit.  I missed fair week, because of course, that is a busy time for us!  My oldest girl did amazing and made me so proud.  Hopefully, I will have last Tuesdays dinner posted soon!
